That should indicate that they process it at low temperatures. But since that’s more expensive, you’d expect to see mention of their process in the product description. Apparently, it’s Whole30 Approved.

I like that the label mentions a breakdown of both the macronutrients and micronutrients in their beef liver. You can even see the ratio of each amino acid inside, something no other brand lists.

Country of origin. Countries vary tremendously in their requirements for the raising of livestock. How much sun they see, what they eat, allowed chemicals, and more. Cattle from Argentina and New Zealand are considered the best, because of more stringent hormone regulations. For example, the cattle fattening hormone, diethylstilbestrol (DES) is banned in both. The right unpolluted regions of the United States are also good. Search for organs free of hormones, pesticides, and GMOs and raised either in Argentina, New Zealand, or the USA.

Processing method. Supplement companies often use high-heat to dry meats, get them to market faster, and increase profit. The process, however, destroys sensitive enzymes, cofactors, peptides, and other biological activity. This is as close to the raw meat as we can get. For the best effects, look for 100% freeze dried products. You’ll also see this called desiccated or flash-dried.

Premium quality. Only buy grass-fed organ meats. Conventionally raised organs are far lower in nutrients, and higher in toxic contaminants. You’ve probably noticed every product in this list is grass-fed. Some are grass-finished, meaning that they only eat grass their entire life (grass-fed cows can still eat grains for the last few weeks of their lives). Pasture raised cattle get to freely graze fields throughout the lives. So the ideal product is grass-fed, grass-finished, and pasture-raised.

Fat content. Organ meats naturally contain some fat. For some organs, like the brain, much more. A controversial topic in the organ lovers community. Proponents of using the fat claim that it’s the way nature packaged organ meats. The other side says that it can cause digestive issues, and humans traditionally tossed the gristle. If you can handle it, I recommend finding supplements that are non-defatted.
